Bruschetta with Tomato and Basil Topping
1 Loaf Rustic Italian Bread, cut diagonally
4 Tomatoes, diced
6 Basil leaves, to garnish
Extra Virgin Olive Oil
Sicilian Sea Salt
Freshly Ground Pepper
In a medium bowl, mix the diced tomatoes and dress with olive oil, salt and pepper. Spread on slightly toasted bread. Add basil to garnish.
Slice the mozzarella balls in half. Gently flatten the halves as much as possible (This is why fresh mozzarella is essential in this recipe). Place two slices of the Proscuitto on the mozzarella and scatter a few of the parsley leaves. Roll up the mozzarella as firmly as possible. If needed, secure with a toothpick. Refrigerate for two hours. Slice before Serving
