Lisa’s Famous Stuffed Peppers
6 Large Peppers-2 Red, 2 Yellow, 2 Green
1 1/2 lb Ground Sirloin
1 White Onion, chopped
1 Egg
1/2 Italian Breadcrumbs
1 6 oz Can Tomato Paste or 1 4-6 Oz tube of Italian Concrentrato di Pomodoro
4 Cloves Garlic Chopped
4 Anchovy Fillets (Optional)
6 T Extra Virgin Olive Oil
2 Ladles of Lisa’s Classic Tomato Sauce
Halve the peppers, remove seeds and pith. Place peppers open side down in 1/2″ of water in a large casserole. Put casserole in a pre-heated 350 degrees oven for approximately 10 minutes or until peppers are soft to touch.
Mix all other ingredients, except for Lisa’s Classic Tomato Sauce, in a large mixing bowl. Remove peppers from oven, drain water and pat peppers dry.
Place two ladles of Lisa’s Classic Tomato Sauce on the bottom of the casserole. Arrange the 12 pepper halves, open side up. Spoon meat mixture into peppers and place back at 350 degrees for one hour.
After 55 minutes, spoon one tablespoon of Lisa’s Classic Tomato Sauce from the bottom of the casserole per each pepper and top with a dab of grated Parmigiano Reggiano. Return to oven for 5-10 minutes. Serve
*Italian Bread Crumbs are bread crumbs made from day old Italian bread with salt, pepper, chopped parley, oregano, and grated Parmigiano Reggiano cheese.
